04-11-11 Chicken Ring 101-365
Every time I make this for dinner and tell someone about it, I always get the same response, "You made what? What is that?" And I go into elaborate detail on how to make it and why it's a ring. So, I thought I'd take a picture of this yummy dish.
It's really called a ring because you're supposed to shape it into a ring. However, I'm pretty lazy and my ring usually looks more like 2 logs. But, Chicken Logs don't sound as nice as Chicken Ring ;)
Lemon Herb Chicken Ring:
2 cups coarsely chopped cooked chicken
(about 12 oz.)
? cup diced red bell pepper
3 TBSP chopped fresh parsley, divided
1 tsp. lemon zest
2 garlic cloves, pressed
1 cup (4oz) shredded mozzarella cheese
? cup mayonnaise
1 tsp. Italian Seasoning
? cup Parmesan cheese, divided
2 pkgs. (8 oz. each) refrigerated crescent rolls
, garlic,2 TBSP parsley, lemon zest, garlic, mozzarella cheese, mayonnaise, and seasoning to bowl. Add all but 2 TBSP parmesan cheese to mixture; mix well.
2.Unroll crescent rolls; separate into 16 triangles. Arrange triangles, slightly overlapping, in a circle.
3.Spoon chicken mixture evenly over dough in a continuous circle. Bring points of triangles up over filling and tuck under dough at the center of the ring. (Filling will show.) Sprinkle remaining Parmesan cheese over ring. Bake 28 – 30 minutes or until golden brown on 360. Garnish with remaining parsley.
first i steamed the wings until they were almost fully cooked. steaming keeps the skin moist while rendering out a lot of the fat. the water left in your steamer is totally gross, but it's nice to see how much fat you avoided eating!
then you coat the wings lightly in sauce (i used soy sauce, honey, kraft brand bbq sauce and some salt and pepper this time) and bake them for about 20 minutes (flip them over after 10 minutes) at 375-400 degrees.
then you eat!
